Savoury Stuffed Capsicums

What you will need is –

7 Capsicums
1 1/2 Cups Brown Rice

1/2 Cup Corn

400gms Diced Tomatoes
1 Cup Shredded Cheese

You can cook the brown rice on the stove top or you can cook it in the microwave which is quicker and for this method I find it easier…Follow the instructions on your rice packet or place your rice in a microwave safe container and put enough water in there so its approx 3-5 cms above the rice…Place in the microwave for 8-10mins…Keep an eye on it though…When your rice is cooked, take it out and drain it, then add your tomatoes and corn, stir well and put it back in for 2mins…
Cut the top off the Capsicums and remove the insides, place them in the microwave for 2 minutes…Check them to see if they are soft, if not put them back in for another 2 mins – it all depends on your microwave but you don’t want to over cook them, so just continue this procedure til they are soft…

Now you can stuff the capsicums with your rice mix…
At this stage you can cover them and put them in the fridge and cook them later if you want – I prep a lot of foods during the day for dinner…

When your ready to complete making these, pre heat your oven to 180, you get the cheese and put it over the top and then place them in the oven for 20 mins…
